Spicy Sweet Potato Hash

This sweet potato hash is a healthy yet hearty breakfast with an incredible balance of sweetness and heat that the entire family will enjoy.

  • 1/4 lb sausage
  • Half of an onion
  • 2-3 garlic cloves
  • 3-4 sweet potatoes
  • 1-2 cups of kale
  • Salt and pepper
  • 1/4 of a teaspoon of red pepper flakes


  • Brown a quarter of a pound of sausage in a pan over medium-heat. Cook about 5-7 minutes, remove it from the pan, and set aside.
  • Cook onions and garlic until they begin to soften. Season with salt and pepper.
  • Add the sweet potatoes and the kale. Season with salt, pepper, and crushed red pepper flakes. Cook for 10-15 minutes until the potatoes are brown and crispy or fork-tender. Add the sausage back into the pan.
  • Cool and serve.


The crushed red pepper flakes are optional.
